Vegetarian Special Roll-Up


Makes 4 roll-ups

4 8-inch blue, green or red tortillas
1/2 cup prepared hummus
1/2 avocado, thinly sliced
1/2 cucumber, peeled and very thinly sliced
1/2 cup sprouts
1 medium carrot, grated
Salt and fresh ground black pepper
Spread the tortillas on a clean work surface.  Divide the hummus among the tortillas and spread evenly, covering as much of the tortilla as possible.  Lay the avocado slices on top of the hummus, down the center.  Lay cucumber slices over the avocado.  Sprinkle with sprouts, carrots, salt and pepper.  Roll the tortilla up tightly to create a log shape with the avocado running the length of the log.  Wrap tightly in plastic wrap and refrigerate for up to 12 hours.  Just before serving, cut the wrap in half crosswise on a slight diagonal.
