Sweet Potato Ravioli

Sweet Potato Ravioli



1 Med/Large sized Sweet Potato
1 Garlic Clove
1 tsp. Olive Oil
¼ cup Skim Milk (optional Soy Milk)
¼ cup Frozen Peas
1 T Freshly Grated Parmesan cheese (or to taste)
12 oz cheese filled ravioli (or vegetable filled ravioli)


Bake sweet potato in oven until tender and done. Let cool. Begin cooking ravioli according to package directions. Sauté garlic in 1tsp butter or olive oil for about 30 seconds. Peel sweet potato and mash, add sautéed garlic and enough milk or soil milk to make a sauce-like consistency. Add Peas to mixture (you don't need to cook them, the heat of sweet potatoes will warm them and keep them crisp). Pour the sweet potato sauce over the ravioli and garnish with parmesan. Cheese to taste.
