Summer Pasta Salad
1 10-oz. package rotini pasta
1½ cups broccoli, cut into florets
1 15-oz. can red kidney beans, drained and rinsed
1 large red or green pepper, chopped
1/3 cup chopped onion
4 oz. part-skim mozzarella cheese, cubed or grated
1 2-oz. can chopped ripe olives
1 large carrot, diced
8 oz. lean, cooked roast beef, julienne strips
2/3 cup (or to taste) low-calorie Italian dressing
Cook pasta according to directions.  Drain and rinse with cold water.  Pour boiling water over broccoli, drain and rinse with cold water immediately.  Combine additional ingredients and chill before serving.
