Mango-Carrot Salsa

Makes 2 cups

1 unripe, medium mango, peeled and grated
½ cup grated carrot
1 tsp. minced fresh ginger
1 clove garlic, minced
2 Tbsp. red wine vinegar
2 Tbsp. firmly packed, light brown sugar
2 Tbsp. chopped cilantro or parsley
1 Tbsp. lime juice

In small bowl, combine mango, carrot, ginger, garlic, vinegar, brown sugar, parsley and lime juice. Cover; chill at least 1 hour to blend flavors. Serve on crackers.
