Golden Pound Cake



2½ cups cake flour, plus 1 tsp. for pan preparation
2/3 cup sugar
½ cup margarine (1 cube), softened
3 egg whites
2 tsp. vanilla extract
1 tsp. almond extract
1 tsp. lemon extract
1 tsp. baking soda
¼ tsp. salt
8 oz. low-fat lemon yogurt
Butter-flavored vegetable cooking spray 


Prepare 8½ x 4½ x 3-inch loaf pan with cooking spray and dust with 1 tsp. of flour.  In mixing bowl, cream sugar and margarine at medium speed with electric mixer until fluffy.  Add egg whites and continue beating at medium speed for 3 to 4 minutes or until well blended.  Add vanilla, almond and lemon extracts, blending at low speed until well mixed.  In another bowl, combine sifted flour, baking soda and salt.  Alternately add the flour and yogurt to the mixture, blending completely after each addition.  (Begin and end with flour additions.)

Pour batter into prepared loaf pan and bake at 350°F for one hour or until toothpick comes out clean.  Cool in pan for 10 minutes, then remove from pan to cooling rack.  Cut loaf into 16 slices and serve plain or top with fruit.
