Banana-Banana Bread Pudding



2 ripe medium bananas
5 large eggs
2/3 cup firmly packed brown sugar
3 cups skim milk
1½ teaspoon vanilla extract
12 cups white bread cubes
½ cup raisins

Preheat oven to 325°F.  Lightly butter a 13 X 9-inch baking dish.

In a large bowl, mash the bananas until smooth.  Whisk in the eggs until combined.  Add the brown sugar, milk and vanilla; mix until well-blended.  Add the bread cubes and raisins; toss to moisten the cubes with the mixture.  Scrape the mixture into the prepared dish.  Bake for 45 to 50 minutes, or until the mixture is set.  Serve warm.  Cover and refrigerate any leftovers for up to 5 days.  Reheat to serve.
